Employment verification letter is different from the offer letter. EP letter states what the position you are now, and offer letter states what position offers to you later, but not current. Remember, you can have many offer letters from different places, so offer letter may not be considered as reliable as EP verification letter.

In fact, EB-1a does not give the weight to your title, rather than your extraordinary contribution (3 out of 10 criteria). It does not matter you are a scientist or an assistant professor. As long as you meet 3 criteria, you are in. So apply with confidence.
