nothing is different for your wife. I know many people who have degrees in Chinese in China and have had to chang their majors in US in order to survive. You can look for some US jobs in China. But all the US unviesity opennings require Ph.D degree or equivilent. Compare to thoses Chinese who have had US Ph.d degrees in US, your wife doesn't have any advantage at all.
Better not show embassy official your intentions, and simply apply for F2 or H1. You'll find what you can do when you land here. Be prepared for the loses
