In some sense, your are right. But petitioners are always worried about the possible denial of I-485, which if happens, will render you loss of legal status. EAD will be immediately revoked upon 485 denial. Most people will stick to H1 or other work permit if possible. Even lawyers won't suggest the primary applicant use EAD unless it is the only choice.
