The employer letter when you will file I-485 must be from the I-140 sponsor (or its successor of interest).
Are you the same person that posted a question about how to answer possible RFE for EVL in the future? If yes, the safe response is the EVL from current employer plus an offer letter of rehire after GC from the I-140 sponsor.
If you cannot get such offer letter from previous employer,
1. you might want to keep silence and hope IO doesn't know the difference. Not to worry it unless I-485 is denied.
or
2. argue that the I-140 sponsor's intent to hire you after GC approval was true, you might not have much hard evidence without the help from previous employer, and therefore still have risk of denial.
