Filing I-485 does not invalidate your current F-1 status. So even if your I-485 is denied eventually, you can keep studying in your current program to seek the degree. There are examples that F-1 students successfully apply OPT after filing I-485. So it seems that I-485 filing does not affect the OPT application. But you may have some trouble to apply a new school after you file I-485 because you have shown immigration intent.

Keep in mind that you must keep your F-1 status itself, such as maintaing the required credit hours each semester.
