Base on AC21, even if your old employer revoke the I-140, it will not affect your I-485 (actually I-140 is useless in this stage).

It is true that it is pretty simple to file AC21 memo to let the new employer to take over the I-140. So, just go ahead to do it at least it will make you felt safe in your mind.
