Based on AC 21, you could inform USCIS.

if you changed job 180 days after you file your 485 and you are working in the same area, you should have no problem. you could either report or not report to USCIS. but USCIS May request pay stubb and support letter from your current employer, you should explain to them at that time.
if YOU ARE LUCKY, USCIS mingt approve your 485 without asking for your current pay stub and employment letter, you just enjoy your freedom.
