After using AP with still valid H1 from old company, what's the status I am in, H1? I am not in AOS right?

If I am not in AOS status, then I can extend or transfer H1 to new company. Am I right?

After using AP come back to U.S., can I don't work for old company and directly work for new company before submit H1 transfer? How long is the period I can be safe? I am planning to submit H1 transfer within a week when I am back. Is it fine?
