1. I think your working experience in China counts as long as it is related and you can find somebody to write the letter to confirm it.
2. But, technically, your firm decides what the position is. It does not matter whether you have a master degree or you are 5+ year experience. If your firm believes that bachelor without experience will still qualify that position, it still should be EB3.
Just my opinion, could be wrong.
