I think she has to leave the States to adjust her status. Since she has been out of status for one year. anyone who has been out of status can't change his/her status inside the States. But then she might get rejection when applying for the visa stamp. One of my friend did that. And his wife and his kid failed several times before getting the visas.

It shouldn't affect your immigration to Canada.
