The employer can always revoke your approved 140,since I-140 is their property. However, 485 is yours. If 485 is pending over 180 days,the revocation will not affect your 485 process. You are good to go.
485 will be processed as usual. You will only fall in trouble if you can not provide the new employment verification letter in similar field when CIS issues you RFE.
