F-1 status has a 60-day grace period after OPT ends. If her status is still in this grace period, she will be OK. She also can talk to Human Resources about her situation. It is very normal to explain this to the company and ask the company to do the paperwork as soon as possible. If nothing works, she just need to go back to her country to get the visa to enter U.S. again, but talk to the company first before taking any action.
