If you don't extend I-20 or I-20 is not extendable, you'll be AOS then. You have no problem in attending school in AOS, but you need EAD to work for any pay.
If you extend I-20 successfully and have not used EAD, you will be still in F-1.
If you use EAD, you are AOS and are supposed not to extend I-20.
Being an F-1, you have maintained your nonimmigrant status so you may stay in US even if I-485 is denied. Being an AOS, you must leave the country in above situation.
