When you quit your job, the HR of your company will report USCIS that you are no longer employeed with them. So, unless you have a plan for another status, like F1 or even another H1B with some company then you are out of status officially.

Even if your school cannot find out you quit your job. You will have a BIG problem in the future if you want to consider applying for H1B again, and green card. Not sure if there is anything like 245(i) available then.

So, you'd better think carefully what do you realy want to do.
