As I heard frim before, once your GC is approved, you will be denied for any H1B,EAD, or AP. So you should be able to work directly under GC. As changing job, before your approval you will only be able to change job under AC21 with similar field. After that I am not sure if you will be able to change field, Maybe Xiao Bai Tu will give better answer. Also If you leave your company(sponsor) less than 180 days after your GC, you may have trouble when you apply citizenship later. They may think there is no perm. job in the application and revoke your GC. If your leaveing is due to layoff. That may be better because that is in good faith.

By the way, did you get any LUD before the approval?
