Yes, you need to include all previous immigration and non-immigration documents, include visa, passowrd, SSN, I-120, H1B approval and work permit (EAD) approval documents, and employer/work related files. If you do not the I-120/F1/OPT documents, you may get RFE (Request For Evidence) letter from USCIS service center later to ask you to the required documents.

One way to get I-120/F1/OPT files is to go to your college/University's Internation Student office to ask then if they have a copy of your documents or at least to write a letter for you to prove what you said in the I-485 application is ture.
