If you are invited as a speaker, it should count to help demonstrate that you are extraordinary. Email will work too.
But if it is just participation, you probably need to demonstrate that participation is highly selective and is based on scientific credentials.
Even if you are invited as a speaker, this evidence will not be useful to cover any of the requirements for Eb1a by itself, although it will strenghten some arguements.
