I don't think you can do it: keep your I-485 & work in China

I-485 adjustment of status is the immigrant way for the applicant who reside within USA, if you live in another country,you should choose to get an immigrant visa via consular processing instead of I-485,factly I never saw anyone got his/her who lived out of USA to get green card with I-485 .
