You are only AOS now because you used EAD. You don't have any base status to start GC (just ask yourself: how to start the GC process?). You cannot jump to another boat after your status is only AOS (That's why people still kept their H1 (other) status even after they filed 485 and got EAD). However you can try to get new H1 visa outside of US to restart a new status if your current 485 does not have any hope.
