It is better to stay in the same field until you get your GC. You never know what they will ask you for before your 485 is finally approved. To be safe, it is better to stay put.
However, it is fine if you want to take off some time period to do something else. Like go back to China using AP. Then you can start your work with EAD. You can also take a rest when the visa bulletin is moving like a snail, haha. But it is better if you have some job offer waiting for you and you can start to work as soon as it is necessary.
To go back to school is fine. But you can't be F1. And I don't think it is a really good idea to be a full-time student as your application is NIW. It is hard to convince INS that you are contributing to US by studying as a student.
