CPT usually is a within-school matter while OPT has to be approved by INS, where your GC application is.

Application for OPT is NOT recommended (by my school's intl office) when you are at 485 pending stage.

I think your wife will receive her EAD pretty soon at least before next May. Then she can work using this EAD with no problem at all.
