Pending I485 180 days without being adjudicated, the applicant can change employment as long as it is in the same field and same type of position.

Unless you are interviwed for I-485, USCIS may not know that you have changed jobs. If interviwed, you must bring the employment letter and paycheck stab and three years tax returns and W-2s. you can explain the change and generally DAOs who interviews you will not that fussy about the change. I haven't seen anyone got rejected due to change of jobs.
But if you change address, MUST REPORT. and need to phone USCIS 1800. otherwise, if your interview notice or any thing sent to old address, your fault. Appeal takes long and could be over 1 year to process.
