I think you should be very careful about the petition for H1B. Volunteer works never counts as prefesstional credentials. And if the immigration officer is picky, he/she might even think that your wife's previous volunteer work was for the purpose of getting a job offer, which means she takes a job from other potential American employees. Then you guys will have big trouble.
A lot of people think that starting as volunteer and then getting the boss to like me will lead to job offers. That works well on the employer part. On the INS part, that is in the gray area but closer to illegal employment than pure volunteer work with NO pay.
Maybe she should not mention the experience at all.
