1. Either one will work. If you use 485 based EAD, then you'll be on AOS. That means, if your 485 gets denied, you have to leave USA. If you use OPT based EAD, you can apply for H1 later. So even though your 485 gets denied, you'll be legally in USA with H1.
2. EAD card will work. You also need SSN.
3. No. You can switch from AOS to H1 status.
