The purpose of AP is that you do NOT need any other visa to come back to US. By using AP alone does not dismiss your H1b status. You come back to the same position and your H1b status still valid. However, if you ever used EAD (not just applied for one), than your H1b is no longer valid. Be careful.

Sure you can still apply for a H1B visa in China, and probably you will get one. (But you don't have to, since you already have AP) And you can use that H1B visa to come back to US. In this case you do NOT need AP, even though you may still carry it in your pocket.

Do NOT use H1b visa and AP at the same time, it does not make any sense.
