You can't work without EAD card. It will take about 90-100 days to get your renewed EAD card.

In addition, although you have EAD card, some universities will not allow you to register as a full-time student. So, please go to your university's internationla office to check it. I have the same situation with you, but, I have to wait my J1/J2 waiver, then, I may change to F1-visa. After I get the final approval letter of F1-visa, I can register as a full-time student.
