visa is official document for your to enter U.S. And status is what you are doing legally in US. You came here with H1 visa (NOT status) and work as H1. Therefore your status is H1. But since your H1 visa expired, you don't have valid H1 visa for you to re-enter US. But as long as you stay here working, you have valid H1 status and don't need a new H1 visa.

What he said is that, as long as you have valid H1 visa, you don't need to use AP to enter US although your I-485 is pending. I think it is true. But since our Chinese's H1 visa expire very quickly and you said that your H1 visa expired already, you can't enter with the old H1 visa. Therefore, it is better to have AP ready when you travel abroad. If you want to try your luck applying for H1 back in China, you can do that. But it is less predictable than AP.

If you pay attention to INS official note during holiday, you would notice that they always ask people who have GC pending not leave the country unprepared.
