my understanding is that you should be fine... according to one international advisor of my univ., you are still treated as a F-1 student when you are in OPT. The scheduled defense date--(for most of students) the date showing in Part 5 of your last I-20, and the last day you can register as a FULL TIME--is tentative. USCIS understands that day may be changed due to the unavailability of your committee members for your defense, or other reasons...

I think you can still register as a PART TIME
