Term “low-pay” actually is used to compare “higher” paid jobs
There are many posts regarding AC-21/changing job before GC. Even many people can get offers of better job (say more than $10K- 20K/year) by using EAD, they are afraid of losing GC due to AC21 restrictions.
I still think having “GC” is quite different compared with “EAD/AP” both mentally and materially:
1. Mentally: don’t need to worry about lay-off which happens often especially in bad economy even with big company;
2. Materially: a. way more chances for better job (not only because AC21 restriction for changing job, also because a lot of decent jobs require GC); B. save tremendous college tuition for your kid/spouse.
If your I-485 lasts for a few years you can calculate your loss which is more than $350/year. Of course, I agree if none of the above cases apply to you, you can enjoy your life during I-485 pending as xiaobaitu says. I also agree if there is nothing you can do to improve your situation, you should wait patiently, relax, and “try to” enjoy your life as well.
