As long as the approved 140 based on EB2 is not revoked, you can use its PD for your 485.
I am wondering if I ask for the earlier PD for my I485 now, What date the USCIS will think my I-485 is filed? Can I then port my I-485?
Using earlier PD won't affect your 485 filing date, therefore won't affect 485 portability.

You need to file AR-11 if there is a permandent adress change. You need to call or write to the service to change the address of each application that is still pending. CIS expects you to tell them your job change by sending a AC21 employement letter if you use AC21 rule. But the last requirement is not mandatory. You may choose not to do it.
