I don't think you should do that because your application is based on your research, not your employer. Actually NIW doesn't need sponsor, the sponsor is yourself. Another thing is the so-called I-140 application is based on you are seeking for a job in US after you get approved in the field you mentioned in the I-140 form. If EB1B, you cannot change sponsor before you get 140 approved, but can change employer if your 485 filed for 180 days. So my understanding is you just tell USCIS you have changed your address. (I am not sure, ask for help with a lawyer)
