You do have some choices. The most importment thing for you is NEVER use EAD, otherwise your wife will not come with at least 5 years.
The good thing is current visa backlog for I-485, which means it might take several years for your 485 to get final approval. First, make sure she is able to come with F1 in a short period. If so, go ahead and get married once she comes. If not, go back and marry her ASAP. Meantime apply for H1b visa in China, try not to use AP. Of course you will keep H1b is you use AP, but some institution may argue you are not H1b thereby refuse to sponsor your wife's H4. Then you wife can come with H4 in this way and she can stay here as long as your H1 is valid. Again, don't use EAD. If might be hard for her to get H4 visa because VO will adoubt the purpose of your marriage but it's still dorable if she can convince VO that your marriage is real.

H4 is the best way for her to stay here with you. Although F1 works, but once you get married, she can not go back visit her family before get GC. Other visa type such as B2 won't work.

Another important is thing get married before your 485 approval. Otherwise another nightmare will come.
