you shouldn't use your chinese passport and it is illigel and cheating if they find the fact. however, whatever you like to take a risk,it is fine. Both sides of US and Canada share information each other when you cross the border. If you lie to them, they will audit everything when you need them to do something for you in future. don't risk your future for little inconvience.
