I have the similar experience as you.

I submitted my I-140/I-485 last Saturday (Sep.24) via USPS express mail. Today (Sep. 29) I found the checks have been cashed on Sep. 28.
I made my checks payable to U.S. department of Homeland security.
I do not have a lawyer. I filed all of them by meself.
