you have to get the passport stamped and only then will the local INS office send out the actual card request to confirm that you do want the green card (sounds silly but it's the procedure). And also it's at the time the local INS will take away your EAD and AP document to complete the immigration procedure.
The wait for the actual card can vary from a month to up to a year depending on your luck.
Yes, the stamp is a proof of approved green card and you can use it to travel.
