I think they will be able to find out. Don't try this. As I said, INS granted you H-1 because of you as a skilled worker, not because you held Chinese passport. So the H-1 is not assoicated with your citizenship. Since you got your H-1 when you held Chinese passport, bring it together with your Canadian passport and original H-1 paper and you will be fine.
