Yes. Tell them that you are H-1. The reason you are confused is that you mixed the H-1 with your citizenship. You held Chinse passport and you got H-1 in the past and now you hold Canadian Passport but you still on H-1. Unless your H-1 expired, you don't have to worry about it. If they ask you, which I doutle, tell them the truth. US custom officers are pretty reasonable.
