1) Only using EAD will invalid your H1B status, not applying
2) CIS allows dual status of AOS(I-485 pending) and H1B. It is listed in official website.
3) After using EAD, your status will be AOS. If I-140 got denied, then you are out of status. Even your I-140 got approved, then you are still limited by keeping job or change to similar job (assuming your I-140 requires employer).
4) Keeping H1B is always better than using EAD before I-485 is approved since there is always some risks. So if you can keep H1B, just take advantage of it. But always keep EAD available since sometime you may got layoff unexpectably and can not find a job in one month. Or sometime simply the new employer will not apply/transfer H1B for you and you must use EAD. Or maybe someone think it is too expensive to transfer H1B using premium processing (>$1000) if one need job immediately. EAD allows you to take job next day.
5) Last, Using AP will not invalid your H1B.
6) Summary: keeping H1B and applying AP and EAD. Using AP is ok. After using AP, you can still extend or transfer H1B.
