After getting J1, refuse?

i have two candidate offers for posdoc.who will give me J1 visa, can I first get it and then refuse, is it possible? is there anyone haveing such experience to tell me the possibility? In addition, if I go to USA with J 1 visa, is it possible to find other positions after finihing this appointment? Too anxious and many thanks for your help!
