You can try. If get caught, don't complain that I warn you before.
Without a valid foreign visa or foreign resident document, you can't leave China with your PRC passport.
If you try to leave China with your Canadian passport, you will be considered enter China illegally. You may be deported and it will affect you to get future China visa.

Good luck if you try to save CDN$50 visa fee.
