The evidence should have date which tells which date you were still working in that company. By the way, it is illegal if you did work for your employer but he refused to pay you. You can sue him (talk to a lawyer if you pay $100 consulting fee but get $1000 check back, or ask the lawyer to write a letter to your employer).
