1. Any notary copies from China is OK. notaries from 4 years ago should be fine. Except for non-criminal, better have new copy while you're waiting for responses from CIC.
2. 工作證明: No ; 學問公證: Yes, if you want to get points from his/her education.
3. US master has nothing to do with 雅思. But you can write a letter showing your language ability, and in the letter, you can mention that you have US MS degree.
