For the following reasons:
1)your case may be approved before you graduate next year (best case scenario)
2)at the very least, your hu*****and's 140 may be approved before you graduate. Barring extreme circumstances, the 485 is almost guaranteed approval. (may not be the best case scenario, but perhaps second best)
3)your canadian immigration is approved
All of the above options makes keeping your F1 almost irrelavant.
Worst case scenario, the 140 is denied, and you have no status, you can still apply for H4 outside of US (if your hu*****and keeps his H1 status)and you still have
canadian immigration to fall back on.
The alternative of not filing 485 now is like what you said, you may miss the train so to speak and get stucked in retrogression. I think this is worst than the worst case scenario if you do file 485.
