After turning in the forms, passport and the invitation letter, here are the basic questions the VO will ask most of the time:
1. working or retired?
2. Have you been to the US? When was the last time?
2. how many kids? Where are they (in china or abroad)?
3. have your kids come back home to see you? when?

Some other questions VO may ask based on individual situation:
1. How long will you be visiting?
2. Own property in china?
etc.

So all the other documents are prepared for supporting evidence only, if lucky, the VO may not ask for any additional documents, or only ask for some. My parents vistied twice, the second time the VO didn't ask for anything else, even their retirement certificate.
