Your field is good for NIW. I think that your petition letter failed to work, rather than that your qulification is not good enough. Because we actually don't know what they needed (when you review a paper that you don't understand well, you cannot ask question either). In gereral, I think that the exmining officer is looking forward to a more clear and simplified statement. However, you cannot wirte a new petition letter because you have already done it.
A good solution is to submit 2-4 addtional reference letters, along with you cover letter, to provide a clear image in
(1) your key role in your group and consequence of your leaving.;
(2) importance to American health community;
(3) impact of your work in the field in the national scope.
