【業餘廚子】在家醃酸黃瓜

疫情期間開了一小塊地學著種菜,種了兩顆專門做pickle的cucumber. 萬萬沒有想到居然結了不少黃瓜。每天都能摘4、5根,吃不完就拿來做酸黃瓜了。

酸黃瓜有兩種做法,一種不用高溫消毒的(refrigerated pickles),放冰箱醃24小時就可以吃了,可以冰箱冷藏保存3個月。因為沒有加熱,這樣做的酸黃瓜比較脆。是我比較喜歡的方法。另外一種需要高溫消毒(canned pickles),可以保存一年,而且不打開就不需要放冰箱,這種做法沒有前麵那種脆。

兩種做法的料都是一樣的。這裏方子是做一瓶1 pint的量,想做多一些加倍就是了。

  • 2 pickle cucumber. Leave the cucumbers whole, cut them into spears, or slice them into coins, as desired.
  • 1/4 cup sweet onion, sliced
  • 4 springs dill

除了大蒜其他的都是菜地裏的。

今天做了三瓶1 pint 的canned pickle,用了五根黃瓜,兩個小甜洋蔥。有一瓶裏麵還放了一根自己種的辣椒。

 

Brine ingredients for 1 pint pickle:

  • 1/4 tsp dill seeds
  • 1/2 cup apple cider vinegar 
  • 1/2 cup water
  • 3 cloves garlic, smashed
  • 1 3/4 tsp Kosher sea salt
  • 1/4 tsp whole peppercorns or whole yellow mustard seeds
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 tsp celery seeds
  • 1 tsp sugar

apple cider 不同的牌子酸度不一樣,一定要嚐嚐才能決定糖放多少。

 

做法:

  • Fill the jars with the herbs and flavoring and tightly pack with cucumbers?, onion and dill springs.
  • In a small saucepot heat the vinegar, water, garlic, and all spices until the mixture comes to a simmer and the salt and sugar dissolve.
  • Cool the brine down to warm, and fill the jar so everything is covered with brine.
  • Make the brine and fill jars to 1/2″ below the top.

這時冰箱冷藏的酸黃瓜就做好了,蓋上蓋,放冰箱,24小時內就可以吃了。保存期3個月。

 

下麵的是今天做的,要加熱,可以室溫保存:

 

 

不用放冰箱冷藏的酸黃瓜接著做地下步驟:

  • Screw the lids on enough to keep a tight seal in place but don’t over-tighten them since air bubbles need to be able to escape.
  • Place packed cans into the canning pot and cover with 1-2 inches of water. Bring to a boil and process 15 minutes. Remove from the pot and leave at room temperature undisturbed for 12-24 hours. You may hear a pop when the jars fully seal. 
  • After 24 hours, you should push in the center of the lid, it should not pop up and down. This. Eans the jar is sealed. Properly sealed jar can be stored ar room temperature up to a year.
  • If you do hear a popping or clicking, the seal did not form and the jar must be refrigerated and consumed in three months.

正在加熱:

 

做好了,寫上日期,標上辣的,室溫下可以保存一年。

 

這瓶是前幾天做的冰箱冷藏的,不用加熱,瓶子比較大,用料加倍了,這個非常脆。
