交作業 – 私房菜和其它
在這裏要多謝suzie-q 納米生物和文學城的 私房菜 ,在這裏我可以學到很多中國各地不同的菜,以前想吃的菜要去旅行才可以吃到,現在想吃的隻要停留在私房就什麽菜都有得吃了.

這是一魚三吃的其中之一潑辣魚
這個recipe很好吃,我沒有貓魚肉片,剛好朋友送了這條魚給我,就把它做潑辣魚了.
貓魚肉片, 用酒, 白胡椒, 鹽, 蛋清, 澱粉, 薑絲, 抓好, 冰箱待會兒.油鍋小火煸炒香, 蔥段, 薑絲, 花椒.雞湯兩罐,再對一杯水, 加一點酒, 鹽, 味精, 一點糖提鮮(不是要吃甜味), 中火燒滾,撈出香料來,這時另起一小鍋到入冷油和幹辣椒,慢火熬香, 變褐紅色,但不要焦,改中小火, 一片一片往裏加魚片, 不要攪動, 略燙一下,魚片變色, 加入泡過冷水瀝幹的粉絲, 一滾就裝大碗, 馬上把熱油泡香的幹辣澆上, 開吃.

醬拌茄子-

嫩茄子切條泡過鹽水,瀝幹,
平底不粘鍋放一點油, 加茄子, 加一點水, 蓋蓋, 燒軟, 中間翻個麵, 裝盤,
鍋裏用油炒香蔥薑蒜末, 加剁椒, 辣豆瓣醬, 耗油, 糖, 勾欠, 澆在茄子上. 撒蔥絲香菜拌勻吃.

也是從suzie-q那裏學的,很好吃~

納米生物的修正主義的牛肉燒土豆

切好的牛肉冒血。這過程太不堪入目,就沒照像。冒過的牛肉用水一塊一塊地洗得幹幹淨淨,瀝幹水備用。鍋熱入油,下一把花椒,小火煸到六成糊時,趕出花椒,隻留花椒油。納米生物烹飪風格一貫是少油,如果一盤菜裝盤後,用眼可見餘油,那麽俺就認為是失敗的。當然有些特殊的菜整個就是泡在油裏的,那就另說了。請相信,照片上這點油足夠2斤8量牛肉加2斤土豆的!肉下鍋大火翻炒1分鍾,加少量糖(多了就不北方了),胡椒粉,薑粉,醬油,料酒,再翻炒幾分鍾。加水沒過牛肉,並加大料的一個角,適量辣椒(愛吃辣的多加,不愛吃的不加)和鹽。蓋鍋,小火收湯。一邊燒著牛肉,一邊準備其他的配料。土豆刮皮切成形狀似牛肉的片狀小塊兒,去澱粉。香菇,黃花菜泡開洗淨。大概50分鍾後,牛肉水快幹了,也基本爛了,開鍋下土豆,香菇,黃花菜。水如果太少了就再加點兒,顏色要是不夠深就來點老抽調色。再次蓋鍋,悶燒。此時撥蒜,切蒜。既然是北方口味,蒜就要狠下,而且要再出鍋前下鍋,否則早下了,蒜就熟了,熟了就沒味兒了,沒味兒了,嘴就不臭了,風格就不“北方”了。下味精出鍋。這個盤子可是一個鬼子們拌涼菜(所謂沙拉)用的超大超深盤呀!口徑30厘米的!足足2斤8量肉,2斤土豆,外加香菇和黃花菜。俺們兩口喝著啤酒一會就掃蕩一空。各自心中暗喜道,“嘿嘿,來生還當北方人!”

日式香煎魚第二吃法
材料: 魚塊, 鹽,胡椒粉.
汁料: 生抽, 檸檬汁, 糖 (把這三樣,煮成汁)味道自已調.
用鹽和胡椒粉醃魚,熱鑊下油,把魚,煎熟,把汁料放在煎香的魚上即成.

翠玉瓜包魚塊第三吃法
一魚三吃, 朋友送了條rainbow trout給我,一看就知什麽人送的了.沒頭的.就是白人朋友送的.中國人喜歡吃骨,所以一這要有頭.
材料:魚塊, 翠玉瓜切薄片, 鹽, 胡椒粉
汁料: 生抽, 檸檬汁, 糖 (把這三樣,煮成汁)味道自已調.
用鹽和胡椒粉醃魚,用翠玉瓜片把魚包好,熱鑊下油,把魚煎熟,把汁料放在煎香的魚上即成.
這是我吃的,老公吃了日式香煎魚,他很喜歡吃.

材料: 豬扒 蕃茄 洋蔥 紅 綠甜椒 鹽 糖胡椒粉.
豬扒用鹽胡椒粉醃過煎香兩麵,(不用煎熟)放在焗盆,蕃茄去皮用攪伴機打成醬,把一半蕃茄醬倒在豬扒上焗30分鐘350F,在另一個鑊炒香洋蔥下 紅 綠甜椒,和另一半蕃茄醬,鹽,糖調味放在焗好的豬扒上即成.
note: 豬扒不要過熟.
