周末晚餐集(6):烤鱒魚,奶香玉米糊, parmesan 芝士土豆, 麥片聖誕果醬夾心餅幹

Trout is delicate fish in my opinion. It is cold water fish. It has tender texture and mild flavor. Especially good when bake with herbs or grill with lemon & garlic.
在我看來,鱒魚是很特別的冷水魚。魚肉細膩滑嫩,魚腥味很小。魚刺不多也不少。配檸檬大蒜和烹調香料,很適合烤箱烘烤或者明火燒烤。

Baked rainbow trout with lemon and herbs

晚餐菜單:
主菜:檸檬大蒜和香料烤鱒魚
配菜1:奶香玉米糊
配菜2:Parmesan 芝士土豆
甜點:麥片聖誕果醬夾心餅幹

Baked trout with lemon and herbs:
Fresh water rainbow trout
1 lemon
few springs Rosemary
few springs thyme
few springs oregano
2 clove garlic (cut into slivers)
coarse Sea salt
Fresh grounded pepper
2 tbsp Olive oil
1 tbsp butter

檸檬香料烤鱒魚
 鱒魚2條
檸檬一隻
新鮮的rosemary,thyme,和oregano各幾束(隻)
大蒜 2瓣(切成小條狀)
粒狀海鹽少許
黑胡椒
橄欖油2大勺
奶油 1大勺
Seasoning the fish inside and out with coarse sea salt and fresh grounded pepper for 10 minutes. In a baking dish, bush some olive oil all over the baking dish. Lay the fish. Put few springs of rosemary, thyme, oregano, piece of lemon inside the fish. Arrange the rest of herbs in the pan around the fish. Sprinkle some rosemary, sliver of garlic and slice of lemon on the fish. Add more salt and pepper if it is needed. Squeeze lemon juice and drizzle the olive oil over the fish. ( I had to cover the fish head with piece of lemon so that the poor fish wouldn't look at me.)

鱒魚洗靜,裏外擦上粒狀海鹽和黑胡椒,淹10分鍾。烤盤刷上橄欖油,放上鱒魚。魚肚中放上幾束新鮮的rosemary,thyme,和oregano。(可用幹的香料帶替)檸檬切3-4片也放在鱒魚魚肚中。將剩餘的新鮮香料擺在烤盤中,檸檬切片放在鱒魚上。撒上大蒜。如果有需要,再加些粒狀海鹽和黑胡椒調味。剩餘的檸檬擠出檸檬汁. 剩餘的橄欖油撒在鱒魚上。(我不得不用檸檬把魚頭蓋住,這樣一來,可憐的鱒魚就不會瞪著我了。。。)


Preheat the oven at 425F. Cube the butter on top of fish and bake for 20 minutes. You know it is done when you smell the lemony rosemary in your kitchen.
烤箱欲熱425F。奶油切小塊放在魚上,進烤箱烤20分鍾。如果你的廚房散發出檸檬和香料味,你就知道魚烤好了。


Side dish 1: Creamy corn
Canned sweet corn (I have used my homemade canned sweet corn)
1 tsp butter
1/4 cup chopped onion
Whole milk
Sea salt and fresh grounded pepper
配菜1:奶香玉米糊
罐裝玉米罐頭(我用的是我自己家做的)
奶油 1小勺
1/4杯切碎的洋蔥
全脂牛奶
粒狀海鹽,黑胡椒少許

Melt butter in a heavy pan. Sautee onion at medium heat until soft. Add sweet corn and sautee for another 3 minutes. Take half of corn in a food processer or blender with a little whole milk. Process the mixture until smooth. (Take only a minute or two) Return the creamy corn back to the pan. Season with sea salt and fresh grounded pepper.
厚底鍋,奶油化開,用中火把洋蔥炒軟。加入玉米炒3分鍾。取出一半的玉米加些全脂牛奶在粉碎機中打碎直到糊狀。再倒回厚底鍋中。加入粒狀海鹽黑胡椒少許調好味就做成了

Side dish 2: Baked parmesan potatoes
You might want to bake your side dish since you are running the oven. :-)
3 to 4 large potatoes
1/4 cup parmesan cheese (fresh grounded is the best)
1 spring rosemary
2 tbsp Olive oil
Coarse sea salt and fresh grounded pepper
Peel the potatoes and cut into cubes. In a large bowl, combine potatoes with parmesan cheese, rosemary and olive oil together. Season with sea salt and pepper. Mix well. In a lined baking sheet, bake them in a preheated oven at 425F for 20 minutes or until golden brown.
This potato dish has crispy texture outside and cheesy taste. It is easy, simple and delicious. You will love it.
配菜2:Parmesan 芝士土豆
反正烤箱在工作,為什麽不充分發揮它的作用呢!
3-4個大土豆
1/4杯 parmesan 芝士
新鮮的rosemary 1束
橄欖油2大勺
粒狀海鹽和黑胡椒少許
土豆去皮,切塊。取一隻大容器,將土豆,parmesan 芝士,rosemary, 橄欖油混合均勻。加入粒狀海鹽黑胡椒少許調好味。烤盤放好烤盤紙,在425F的烤箱中烤20分鍾或者到金黃。
這到土豆餐外脆內軟芝士味濃。簡單易做,你一定喜歡

這是我的盤中餐。配上一杯白葡萄酒,晚餐齊備了。

Dessert: Oatmeal Christmas Jam cookie bar
I make Christmas Jam every year in the fall when all the fruits are available. And give them as gift for Christmas. It has chunky fruits like peach, plum, apple, pear, cherry, etc.. I guess people name it as Christmas jam is because it has different colors in the jam. I learn it from my mother-in-law. It store well and can be used for dessert for all purposes. This cookie bar is one of the examples.
甜點:麥片聖誕果醬夾心餅幹
每年秋天,水果成熟季節,我做很多聖誕果醬。聖誕節時送給親戚朋友們共同分享。果醬中有桃子,李子,蘋果,梨,櫻桃等。這是我跟我的mother-in-law學的。我想大家稱它為聖誕果醬是因為它色彩豐富。果醬儲藏很久,用途廣泛。這個夾心餅幹就是其中的一個例子。
1 jar Christmas jam
1 cup old fashion Oatmeal
1 cup flour
1/2 cup cold butter
Pinch of salt

Combine flour and oatmeal. Cut butter into the flour mixture until coarse texture. Take half of the mixture and press down in a square baking pan. See pictures below. Pour Christmas Jam on the top level it. Top with the rest of flour mixture.
聖誕果醬一罐(8oz)
麥片 1 杯 (不是速溶麥片)
麵粉 1杯
奶油 半杯
鹽少許

麥片和麵粉混合均勻,切入奶油直到混合物變成顆粒狀。取一半混合物,在方型的烤盤中鋪平,用手壓平。看下圖。倒入聖誕果醬並鋪平。將剩餘的麥片和麵粉混合物撒在上麵。看下圖。
 

 

Bake it in preheated oven at 375F for 20 minutes or until golden brown. Cool it on the rack. Remove from baking pan and cut into squares.
烤箱欲熱375F,烤至表麵金黃,大約20分鍾左右。在架子上放涼,倒出盤,切塊。看下圖。
 

You might want to try it, too. It is simple and delicious.
