南瓜核桃小麥芬 Pumpkin Spiced Muffins

萬聖節那天朋友請我們吃飯,我想應該應節做點南瓜點心。就做了這個南瓜麥芬,順便送幾個給鄰居吃。

 

A friend of mine invited me over for Halloween dinner, thus I decided to make something pumpkin for the event.

 

 

材料:(做8個中型麥芬)

1/3 杯 全麥粉

2/3 中筋麵粉

1/2 小勺 泡打粉Baking powder

1/4 小勺 小蘇打 Baking soda

1/4 小勺 食鹽

1/4 小勺 桂皮粉 Cinnamon powder

1/8 小勺 肉豆蔻粉 Nutmeg

1/2-2/3 杯 紅糖

1/4 杯/1/2 根 黃油 butter (melted)

1 大勺 橄欖油 olive oil

1 隻 中型 雞蛋 (medium size)

1 杯 南瓜泥

1/4 杯 水/牛奶

1/2 杯 葡萄幹(切碎)

1/3 杯 核桃或山核桃 (切碎)

 

Ingredients:(Yield 8 medium size muffins)

1/3 cup whole wheat flour

2/3 all purpose flour

1/2 tsp  baking powder

1/4 tsp baking soda

1/4 tsp salt

1/4 tsp cinnamon powder

1/8 tsp nutmeg

1/2-2/3 cup brown sugar

1/4 cup /1/2 stick cup butter (melted)

1 tbsp olive oil

1 egg (medium size)

1 cup cooked pumpkin (mashed)

1/4 cup Water/Milk

1/2 cup raisin(Chopped)

1/3 cup dried fruit,walnut or pecan (Chopped)

 

 

 

1. 南瓜去皮切丁後加蓋到微波爐裏高火轉5分鍾,熟了就可以了。冷卻備用。把南瓜丁用攪拌機攪拌成醬。 

 
2. 把雞蛋,溶化的黃油,油,水,糖和南瓜蓉倒入一個盆裏攪拌勻成濕料。 
 
3. 在另外一個容器裏把麵粉,泡打粉,小蘇打,鹽和香料粉混勻後分批加入到濕料裏拌勻。加入切碎的幹果和葡萄幹稍微拌勻。 
 
4. 把麵糊用勺子盛入麥芬杯裏至八分滿就好了。烤箱預熱 至350F (175 C),入烤箱烤 15-17分鍾,如果Muffin比較大就烤25-30分鍾。
 
1. Skinned and cubed the pumpkin, cooked it in microwave oven with a cover for 5 minutes, let cool and mash/grind it into paste.
 
2. In a mixing bowl, whisk together the egg, butter, oil, water/milk, sugar and pumpkin paste.
 
3. Combine the flours, baking powder, baking soda, salt and spices together. 
 
4. Add the flour mixture into the pumpkin paste mixture in few batches, add in chopped dried nuts and raisins.
 
5. Line muffin tins with muffin cups, fill the batter into cups to roughly about 2/3 full.
 
6. Preheat the oven to 350 F(175 C),bake for 15-17 minutes. For jumbo muffins, bake for 25-30 minutes.
