南洋風味--馬來香料炸雞 Ayam Goreng Berempah

這款炸雞是我給自己做的午飯,它是椰漿飯 馬來油飯很好的一個菜肴,是我自小很喜歡的一道美食。做這個炸雞的小販會把炸雞時掉在油裏的香料一起撈起來滴幹油,這樣的香料渣渣特別下飯,有的人還會特別要求小販多給一些呢!
 
做這款炸雞的時候本來還覺得我醃得有點多了,結果一炸好俊爹跑到廚房取了好幾塊,邊看電視邊當零嘴給吃了,吃飯時還跟我分了一大半去。

看來這款炸雞可以再做哦!
 
This spiced fried chicken was made last weekend to go with some steamed rice and lentil soup, my all time favorite combination. It is normally served back home with Nasi minyak or Nasi Lemak.
 
I made this mainly for me, hubby tasted it and loved it.  I ended up sharing a little more than half of my yummy fried chicken with him. 
 

 
材料:
2 磅/ 450 克 雞腿肉或整雞切大塊
1 小勺 或適量的食鹽
2-3 根的咖喱葉
1 隻 雞蛋
3 大勺 木薯粉/芡粉
 
以下香料用食物料理機不加水攪成糊:
2 個大約拇指大的黃薑 或 1 tsp的黃薑粉代替 (Turmeric)
2 根香茅 去老皮隻用白色部份 (Lemongrass)
1 個拇指大的 蘭薑 (galandal)
1 個拇指大的 薑塊
2-3 瓣 蒜瓣
2-3 隻 紅蔥/Shallot
 
 
其他香料:
1 tbsp 芫荽粉 coriander powder
1 tsp 孜然粉 cumin powder
1 tsp 辣椒粉 chili powder
一撮的黑胡椒粉 black pepper powder
 
Ingredients:
2 lb of chicken thigh or chicken drumstick cut into half palm size
1 tsp salt or to taste
2-3 sprigs of curry leaves
1 egg
2 tbsp of tapioca flour
 
Blend together into a coarse paste:
2 thumb size of fresh turmeric or use 1 heap tsp of turmeric powder
2 sticks of lemongrass (remove outer layer and use only the white part)
1 thumb size of galangal
1 thumb size of ginger root
2-3 cloves of garlic
2-3 shallot
 
Spices for marinating chicken:
1 tbsp of coriander powder
1 tsp of cumin powder
1 tsp of chili powder
a pinch of black pepper powder
 
 
 
 
1. 把雞肉清理幹淨切塊,滴幹水份,香料用食物料理機攪拌成糊狀。將雞肉,幹和濕香料,咖喱葉,雞蛋,木薯粉和鹽放在一個大盆裏拌勻,加蓋入冰箱醃過夜。
 
2. 在一口鍋裏熱上兩寸油,中火把雞塊炸成金黃色即可。記得把掉在油裏的香料顆粒撈出來滴幹油哦!它可是個下飯的好東西!
 
1. Clean and cut the chicken into 1/2 of the palm size, drained well. Place blended spices, dry spices, salt, egg, tapioca flour and curry leaves with chicken into a big mixing bowl, mix well and cover with lid, marinate it in the refrigerator overnight.
 
2. Heat up about 2 inches of oil in a cooking wok/pot, deep fry the chicken pieces and curry leaves until golden brown. Dish out all the bits and pieces of spices that drop off of chicken into the oil, those are very tasty to go with rice. 
 
配上白飯,很香哦!
Serve with steamed white rice.
